I tried the new "chickwheat" (which doesn’t use chickpeas anymore) recipe from [Mary’s Test Kitchen](https://www.marystestkitchen.com/chickeny-chickless-seitan-shreddable-vegan-chicken/), because i really liked the previous one (which was from [Avocadosandales](https://avocadosandales.com/2017/12/17/chickwheat-shreds/)).
Here’s the result after cooking and shredding, and the meal i made with it (it’s a derivation of [my own recipe](https://vegaelle.fr/recette/veganuary-8-mijote-de-soja-au-gingembre-et-coco-chaussons-aux-chataignes/) with fresh shiitake). The marinade softened the seitan in a very good way, and the texture was perfect.
I highly recommend this #seitan recipe, but a high powered kneading machine is required. However, i found that there’s no need to buy a Kitchenaid for €700, because a very cheap bread machine will perfectly do the job in the "pizza dough" setting! And you can find one very cheap! (wait for january with people selling their presents ;) )

@Nausicaa je pense que je peux améliorer la technique de déchirage, mais c’est déjà une amélioration de la recette de Avocadosandales qui était déjà bluffante
